I forgot the milk and added in dark chocolate too, whizzed up some hazlenuts instead of the ground almonds as I couldn't be bothered to go to the supermarket just for that - kids loved it - didn't do the icing either! They didn't seem to miss it though!! Baked mine in a rectangle flattish mould and the baking time was correct.

Grease and line a 2lb/900g loaf tin with a long strip of baking parchment. To make the loaf cake batter, beat the butter and sugar with an electric whisk until light and fluffy. Add the bananas in a few chunks and beat in with the eggs, flour, almonds, baking powder and milk until smooth – the whisk will mash the bananas. Stir in the pecans, then scrape into the tin. NOT GLUTEN FREE! Be careful with this one. I made it for my brother as he is wheat and gluten intolerant. After I had made it I just happened to check the polenta packet and it said it contained gluten. Thankfully I noticed before my brother ate any. I think this recipe could still be successful without the polenta as it really did not seem to do anything except add a horrible grainy texture to the cake. Tasted ok, but definately not my favourite.

Well, to be fair, the recipe says "is easily *made* gluten-free", not "is gluten-free". Of course it won't be unless you make the necessary changes. When you see a lasagna recipe that says "may substitute vegetables for meat", would you post "NOT VEGAN!"?

REALLY impressed with this cake! I bake a lot and was really dubious about a cake with no butter and sugar but it's lovely. It only took 50 mins and i put a layer of foil over for the last 20 mins to prevent burning. It's like a cross between malt loaf and christmas cake, will definitely be making this again!

just made this and it came out fantastic. Used three egg whites instead of two and used mixed fruit instead of just raisins and sultanas. Baked in a fan oven at 160 not 180, for one hour as some other reviewers suggested. Prep time took me one hour (i'm a cake novice) and the inclusion of egg whites made it quite hard in my mind. It turned out amazing though- my other half couldn't get enough and broke her diet numerous times to eat! Oh, and I used Ron Zacappa premium rum. Mmmmmmmmm.

I loved this loaf cake, followed the recipe exactly but used walnuts instead of pecans. Checked after 40 mins and noticed (in a normal gas oven toward top) and it was browning slightly so covered with foil for last 20 minutes. Came out great, moist and not crumbly at all. I used fine cornmeal (polenta) which was gluten free. Was the only fine polenta I could find (asda) didn't taste grainy at all for me. Definitely similar to Christmas pudding. My 3 and 5 year olds enjoyed a little bit too. Probably wont last long!

This is a phenomenal loaf/cake. I omitted the Rum as I didn’t have any in the house, but it was still spectacular, and have made it a few times with added fresh grated ginger and some cinnamon – it’s good!
I have since made this for 3 different celiac friends all of whom think I am a genius and have asked for the recipe!

Truly a wonderful cake. I used Gluten free flour and it worked great. Also like other comments, I used more rum to soak the fruit. OH thought this was one of my better cakes and couldn't believe that it contained, no fat or sugar. Will be making this on a regular basis in future

I used cornflour, as I couldn't find polenta. Mine took an hour and 15mins in the oven (fan 160c), probably because of the change in ingredient, but it was worth the wait. I filled part of the loaf with chocolate chunks for my cousin who doesn't like raisins and isn't bothered about the extra fat and both parts were delicious. For a 'healthy' cake it was packed with flavour and had a nice moistness to it, like a heavy fruit & nut cake. Yum!

I was more careful this time as I was making it for a coeliac rather than just a good way to use up ripe bananas. My semolina was NOT gluten-free so I used (fine) polenta this time. I used a mixture of pecans and walnuts as that was what was in the cupboard, and didn't top with fruit - just nuts. It didn't slice very well - perhaps it would be better to chop up the nuts into smaller pieces. Tasted just as good as before!

Wonderful cake which can be made quickly when you spot those overripe bananas. I haven't added the drizzle yet as I can't get get past believing I'm on a diet. Neither did I add the banana chips, but the unadorned cake is just perfect and attracts compliments from all who partake. I agree that the cooking time needs to be longer, 10-15 minutes in my fan oven. I judge by the rise and then the colour after the suggested time has elapsed.

Just made this the other day and it was delish - I made a few changes though - I replaced half of the butter with some crunchy peanut butter and I added in 50g of dark chocolate chips (coated in a tbsp flour to stop them sticking). Also added in a 1/4 teaspoon of salt. The result was glorious, moist, moreish and yummy!! I will say that it's a little crumbly when cutting, so it's definitely more like a cake than a loaf. Andi Peters (from 90s children's TV) has a great banana loaf which stands up to carving - a quick google should locate the recipe. It took 50 mins in my fan oven

I had four bananas to use up so made a double mixture. Due to this, I used one large silicone loaf shape and three small loaf tins. The silicone one I sprinkled light brown caster sugar on and the smaller ones had raisins added to the mixture. I covered them all with foil and placed them on baking trays at fan 160 and turned the oven up by 10 degrees on the silicone one at 40 mins. The smaller ones took 30 mins (as recommended) and the larger took an hour and five mins. They are delicious and would recommend this recipe to anyone.

Method

Pre-heat oven to 180c and grease your cake tin of choice.

Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add mashed banana mix well. Dissolve baking soda into hot milk and add to creamed mixture stir well. Sift flour and baking powder. Fold into mixture.
Put mixture into cake tin and bake for 45-50 minutes or until cake springs back when lightly touched.

When ready leave in tin to cool for 10 minutes before turning onto a wire rack. When cool ice with cream cheese icing(my fav) or chocolate icing (the kids fav).

Tip: For a light and fluffy cake don’t over mix this cake once you add the dry ingredients otherwise it will come out hard and dry.

Banana cake has always been my youngest son's favorite cake, so he agreed to help create the ultimate recipe. This banana cake recipe is the best, the one he and I tested in our little kitchen until it was perfect.

We tried different amounts of some of the ingredients, different timing while preparing, and adjusted the baking time. We made three cakes that day, and this recipe is the result of persistence in baking until we got the perfect banana cake.

1
Preheat oven to 275°.
2
Grease and flour a 9 x 13 pan.
3
In a small bowl, mix mashed banana with the lemon juice; set aside.
4
In a medium bowl, mix flour, baking soda and salt; set aside.
5
In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
6
Beat in eggs, one at a time, then stir in 2 tsp vanilla.
7
Beat in the flour mixture alternately with the buttermilk.
8
Stir in banana mixture.
9
Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
10
Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist.
11
For the frosting, cream the butter and cream cheese until smooth.
12
Beat in 1 teaspoon vanilla.
13
Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
14
Spread on cooled cake.
15
Sprinkle chopped walnuts over top of the frosting, if desired.
